Everyone I know this year has had some pretty awesome or inspirational New years resolutions. One friend is doing a picture of the day for 2012, others are working to inspire others or mostly work on themselves. I have decided for mt 2012 New Years resolution is to make a food diary for the year. It isn't an every day entry, but my goal is to discuss recipes I have and whether or not they worked. How I prepared it and how I could have changed it. I also want to share recipes that I love. I love to get a great deal and shop at markets and things, so those will be involved as well. This is also a blog for places I eat out and how I feel about them. I will involve photos in every entry and am totally open for discussion about why I liked it so much or what went wrong. My goal is to have a beautiful year long food diary at the end of the year.

Hey so that potato soup like my grandmother, I've committed it to memory and I lost the recipe so heres my best shot at explaining it.
ReplyDeleteWith the ingredients it's personal preference on how much you'd really like to add.
Ingredients:
10 Large Potatoes
2-3 Carrot Sticks
2-3 Celery Sticks
1 Stick of butter
5-7 Strips of bacon
1/2-1 Cup of floor
2-2 1/2 KNOR brand beef bouillon cubes
Parsely
Salt
Pepper
Worchestire Sauce
Directions:
Start by peeling the potatoes. Then cut them up into cubes(Cut into 4ths or 6ths lengthwise and each disk into 4ths). Place in a 6-10 quart pot. Next peel the carrots and slice into disks, throw them into the pot. With the celery clean, cut in half lengthwise, and cut to desired thickness.
Add water to the pot till it fills up past the vegetables and they start to float. Apply heat and stir periodically.
While waiting for the vegetables to soften in another pan melt down the stick of butter. When fully melted take pinches of the flour and stir them into the butter till it thickens into a sauce. you won't need all the flour in the ingredient list it's more of a preference. Take some of the water from the pot and slowly stir it into the butter.
After mixing the butter sauce, pour it into the pot with the vegetables and stir it in.
Next take the bacon and cut off the fat to make them leaner. With the fat throw it into a pan and cook it down while cutting up the rest of the bacon into bits. After extracting the grease from the fat, throw the fat away and toss the bacon into the pan. Cook the bacon so that it isn't raw but far from being crispy. Take more flour and sprinkle an even coat over all the bacon and grease. Mix it together and set aside.
By this time the vegetables should be fairly soft if not stir the pot and wait. When soft enough smash everything with a potatoe masher. Don't mash to much or there will be no potato chunks in the soup.
Add the bacon and grease to the soup along with the KNOR cubes. Mix together. If the soup is to thick, and it probably will be, add water till its at the desired consistance.
Add salt, pepper, and parsely for your own taste. If it's still mild add another KNOR cube or worchestire sauce till its just right. Cook and stir for a bit longer then serve.
Makes: A lot of soup
Cauliflower Soup

1 Regular Frozen Bag of Cauliflower
3/4 Stick of Butter
Flour
1 Large of XLarge Egg
2-3 KNOR Beef Bouillon Cubes
In a 6-10 quart pot submerge all the cauliflower in water till it floats. Boil till it softens.
In skillet melt the butter. Sprinkle flour over the butter and mix it in. Ladel some of the cauliflower water into the skillet and slowly mix it to make a sauce. Add it to the pot.
When the cauliflower is fork tender, in small bowl scramble the egg. With a potato masher, mash up the cauliflower into smaller pieces. Pour the egg into the water slowly so that it is stringy.
Add KNOR cubes and stir it in. Add salt, pepper, parsley, and whatever other spices you prefer. If its to mild add another KNOR cube.
Broccoli Cheese Soup

1 Large Head of Broccoli(chopped up)
1/2 Cup Butter
1 Medium Size Onion(chopped fine)
1/2 Cup Flour
2 Cups half&half or whole milk(any milk will work)
1 Cup Grated Sharp Cheddar Cheese
2 Cans
4 Cups of water & 2 Chicken Cubes KNOR
Cook broccoli till tender; set aside. In a large heavy pot, melt butter and saute onion till clear. Stir in flour, blend till smooth. Cook slowly for 5 minutes. Add milk slowly, then stir in grated cheese blend till smooth. Puree thick pieces of broccoli (stem part) then slowly blend chicken broth into sauce. Add all the broccoli. Stir to blend well (can scorch easily). Add salt & pepper - simmer about 15 mins
